Kneidlach are matzo balls made of matzo meal that grace the soup on Passover meals. A single one is called a kneidle (rhymes with dreidel) but no body wants just one! Some people say you can’t fulfill your Passover obligations without them!! Just Kidding! What do I need?
1 kg. Matzo meal (2.2 lbs.)
5 eggs
1 liter warm water (not boiling)
4 tablespoons oil
1 teaspoon salt
1 teaspoon white pepper
How do I prepare it?
Mix all the ingredients together and knead with your hands for 5 minutes. Place in fridge for 1-2 hours.
Boil a pot of water add a bit of salt and oil. Roll small balls with your hands and place them in the boiling water. Cook for 20 minutes until all the balls float.
Place in bowl of soup when serving
